I am a total weirdo and I love the macabre part of Halloween. Jared, my fiancé, and I have been doing a Halloween Movie Marathon. We will watch one Halloween or Horror movie every day until the 31st. I guess I didn’t realize until just now that we have a lot of traditions and rituals. ? In honor of Halloween, I wanted to make a spooky, peculiar but tasty drink!
This recipe is inspired visually by this cocktail, the Drowned Rat which is inspired by the classic 1971 horror flick Willard. That drink is a chocolate beer float. Since I don’t love alcoholic chocolate, I decided that I would make a beet based drink and then – SNAPS- I got it, a Beet Bloody Mary.
I love beets and they pair so well with vodka. In fact there are quite a bit of beets in Russian cooking. I think this drink would actually compliment one of my favorite dishes from one of my favorite local restaurants called Herring in a Fur Coat, it’s a layered spread at Kachka’s iconic salad inspired by the dinner party classic. It’s also known as “shuba.” It includes layers of herring, potatoes, onions, carrots, beets, mayo, eggs.
This drink is so earthy and a little sweeter than it’s tomato counterpart.
It’s a bit of a life mission to create a signature Bloody Mary recipe and so I have been trying different flavors. My final recipe might have to include beets. Not only does it taste good but look at that gorgeous color!
You’ll have to make beet juice if you can’t procure pre-made Beet juice. This takes a bit of doings to juice it yourself but it’s so worth it. Just use gloves and surfaces that don’t easily stain. I am excited for y’all to try it! Happy Halloween (almost)!

Beet Bloody Mary
Spooky and off “beet” version of your classic bloody mary that is earthy and sweet.
Ingredients

6-7 Beets (I used a combo of golden and red beets), juiced or pre-made beet juice

.5 oz Bloody Mary Mix (I used Demitri’s Bloody Mary Seasoning)

1/2 tsp Horseradish (optional)

1.5 – 2 oz Vodka (I used Olympia Artesian Vodka, made by the folks at Olympia Beer)

1 Cylindra beet top (aka our rat tail) for garnish

Garnishes like pickled veg, bacon, etc.
Directions
Beet Juice

Peel and chop your beets into small enough pieces for a blender or a juicer.

I used a blender so you’ll have to blend all your beets and strain the pulp. I used a cheesecloth as my strainer and I squeezed the juice. If you use a juicer, you won’t have this extra step. Lucky you!

This recipe will make more beet juice than one serving.
Beet Bloody Mary Cocktail:
- Fill a rocks glass or a collins glass with ice.
- Place about Bloody Mary Mix into the cup and add your horseradish to taste here.
- Add 1.5 – 2 oz of vodka, depending on the glass you use.
- Top off your glass with beet juice.
- Give it a stir! Taste and flavor with what you need.
- Slice the end of the Cylindra beet for your “rat tail” garnish. Float your rat tail on top of the ice and you got yourself a Beet Bloody Mary.
Tips & Tricks:
? REMEMBER: with horseradish, less is more. Start with a little and then taste it. It’s really easy to make it too spicy.
? Use cutting boards, clothes and gloves because beets are highly pigmented and you don’t want to stain anything you cherish!
