Japanese 75 | 12 Days of Drinkmas

Nothing says festive fancy party like some champagne. Let’s be honest all of us could use some festive fancy feelings right about now. So instead of popin’ bottles in clubs, we’ll be over here popin’ bottles in the kitchen in our jammies or dressed up (do you boo, boo) while blasting all of the greatest hits of the ’90s.

WHAT’S A JAPANESE 75 YOU SAY?

It is essentially a French 75 (gin, champagne, sugar, and lemon), with Sake instead of Gin. Sake seems to be often underrated here in the states. However, it seems to have increasingly gained popularity as Japanese cuisine has. You go Glen Coco. That is my Christmas reference for this post – if you don’t know, you can’t sit with us.

WHAT IS SAKE?

Sake is made from fermented rice grains. There are many different types of Sake; dry, sweet, hot, cold, sparkling, cloudy. The list of options for Sake seems to just keep going. Premium Sake is considered to be any Sake made with grains of rice that have been at least 30 percent polished. The Sake I used in this recipe is a Junmai Ginjo- which is a sake with no added alcohol (Junmai), and rice grains that have been polished at least 40 percent (Ginjo). The higher the polish the better the taste gets. Sake is measured on a sweetness value (+15 to -15) known as the sake meter – nihonshudo.

Now that we’ve got a little background knowledge on this mysterious ingredient. Let get back to popin’ sake bottles and getting fancy with champagne.

  • Servings: 1 deep champagne glass
  • Difficulty: Easy

A modern twist on a classic cocktail, fit for the sparkles of the holiday season.

Ingredients

  • 1.5 oz Sake
  • 1/4 tsp granulated sugar
  • Champagne

Directions

  1. In a flute mix sake and sugar until dissolved.

  2. Top off with Champagne and enjoy!

  • As always I suggest you chill both the Sake and Champagne before mixing up this yummy drink.
