I have been obsessed with Midnight Diner on Netflix and may or may not have decided that I will eat every recipe from the show.
In the karaage episode Season 2 Episode 12, the Master makes a sleepy patron Japanese-style fried chicken. Usually, his guest order a drink, and she says she can only stand liquor, so he makes her a classic Irish/Scottish cocktail called the Highball.
If you haven’t had one, it’s a drink that consists of Japanese Whiskey (in our case)on ice topped with soda water or sometimes sochu or chuhai. There is also an oolong tea variation.
Essentially, it’s a whiskey soda! It’s the perfect crisp drink to wrap up the end of summer (I KNOW. I’m probably the 15,000th person to remind you that summer is ending) and cruise into fall. #sweaterweather.
This drink is simple and easy to sip on and pretty much my go-to when I want something easy and isn’t a punch in the face. You don’t even have to garnish it, but if you do because you are extra like us: I’d recommend a mint leaf, lemon slice, or a shiso leaf.
You can also use a different kind of Whiskey if you like. Jim Meehan recommends it is a single malt, but blends are okay too. We don’t judge.
