Mint & Honey Fruit Salad

Often fruit salads are thought of as those canned artificially sweetened syrupy (yes that’s a word- I think) mushy things. This my friend is not. Far from it in fact. It’s fresh, refreshing, and naturally sweet. Also like most of my recipes nowadays, it’s super simple and can be put together in minutes.

IT’S BERRY SEASON…

A great addition to small gatherings we’re slowly getting back to. Not slaving away over something, but still shows effort. Plus everyone loves fruit, right? The beauty is you can add and omit the fruit as you please! The summertime is perfect for this because most berries are in season meaning optimal sweetness and taste. Using fruits or vegetables in season not only adds to your flavors, since that’s when they are best. It’s also good for the environment.

This fruit recipe you can whip up in minutes and enjoy for the week or take it to your next outdoor picnic!

Mint & Honey Fruit Salad

This is a simple snack that can be whipped up in minuets. Enjoy right away or let marinate and enjoy for a few days.

Ingredients

  • 1 cup Blueberries
  • 1 cup Blackberries
  • 1 cup Strawberry chopped
  • 1 cup Grapes
  • 6-8 leaves of mint julienned
  • 2 tbsp. honey
  • Juice of half of a lime
  • 1 tbsp. ice cold water

Directions

  1. In a large bowl mix together honey, fresh lime juice, water, and mint.
  2. Add in fruit.
  3. Gently mix to combine.
  4. Remember when I said you can add or omit fruit? Now is the time folks! Slices of oranges would add some nice color and flavor. Watermelon and the mint would go perfectly together. Add some exotic fruit like dragon fruit. Adding different fruit brings more color and variety to the salad. And we all need a little bit more color and variety in life.

So next time you get invited somewhere and don’t know what to bring, whip this together and bring the salad game up a notch. Or you can just keep the large bowl in your refrigerator for your weekly midnight snacks – hope that’s not just me. ?
