Easy Strawberry Freezer Pie

It’s strawberry season YA’LL!

I love strawberries not only are they pretty and sweet, but they mean summer is upon us. Ugh, I can taste those sweet juicy morsels that are Mt. Hood strawberries. If you haven’t had a Mt. Hood strawberry, you have not lived. They are not in season just yet, and I know the PNW is not quite in freezer pie mode, but where I have now located its freezer pie mode.

That’s right, I said now located. It’s been a whirlwind guys, and I don’t usually share very many personal life things on here, but I MOVED! I moved to the Sunshine state, my natural sun habitat but not quite the same 😉 Nevertheless, we gal’s at Whiskey Works are still doing the thang’! *thank goodness for these interwebs I tell you. It’s been high 70’s to low 80’s and my blood has not quite thinned back out yet, so your girl is slowly melting in this heat. Viola’ this strawberry freezer pie.

EASY AS PIE

Yea I said it ? When I say this is an easy dessert, I am not joking. It’s so simple and easy you’ll be amazed when eating it, and so will your stomach. At max 5 ingredients, and if you want to skip a step and buy premade jam or marmalade, even simpler. A quick dessert that you can whip up on your lunch break and have ready for dinner.

Easy Strawberry Freezer Pie

  • Servings: 8-12 slices

A simple pie for the summer, when you don’t want to heat up the house more than you need to. Have this cool treat ready to go for the fam with little to no effort on your part, but all the reward!

Ingredients

  • 12oz Tub of Whip Cream
  • 1 pkg Cream Cheese
  • 1lb Strawberries
  • 1/4 cup Sugar
  • 2 tbsp Water
  • 1 Graham cracker pie crust

Directions

  1. Let cream cheese come to room temperature and whip cream to thaw out.
  2. While those are thawing, start your strawberry sauce.
  3. In a medium saucepot on medium to low heat. Combine washed cut strawberries, sugar, and water. This will make a simple strawberry sauce short of a jam. Stir occasionally until your strawberries have broken down in a light simmer, about 15 minutes. Until the sauce thickens.
  4. Set aside to cool.
  5. In a medium mixing bowl whip up your cream cheese until doubled. Gently fold in your whip cream. Once those two and incorporated together, add in 1/2 cup of your cooled strawberry sauce and mix.
  6. Pour half the mixture into your prepared pie crust. Lay a layer of sliced strawberries (optional). Add then add remaining mixture on top. Decorate with extra strawberries.
  7. Set in freezer for 2-4 hours.

Tips & Tricks

  • Replace strawberry sauce with premade jam or marmalade of your choice.
  • If you are making your strawberry sauce add 1 tsp of vanilla and a splash of lemon juice to add depth.
  • That plastic covering on your premade pie, turn it upside down (dome facing up) for an easy pre-fit cover to your pie.

A sweet easy dessert to cool you off when those summer swelters start hitting you. Nothing better than a dessert that you don’t have to turn on the oven on a hot summer day. Try it out and let us know what you think in the comments below! Substitute for another fruit of your choice!
